Tomato Soup for Two

Mealtimes can be isolating for tube fed individuals. Let's share meals again. This tomato soup is delicious by mouth, but is also a well balanced meal for tube feeding.

Blended Tomato Soup

Like all Natural Tube Feeding recipes, this tomato soup is healthy, easy to prepare and designed to be enjoyed by mouth or by tube.


Tomato sauce is a natural source of lycopene– a powerful antioxidant found in cooked tomato products.

Recipe Details:


Ingredients:

1 cup water

1 cup marinara sauce (I used Kirkland Organic Marinara from Costco)

1/2 cup whole milk ricotta cheese (sub hummus for dairy-free vegan option)

2 pieces of bread

1 tsp olive oil


Steps:

Place water, marinara sauce, ricotta cheese and olive oil in a blender. Blend until smooth. Pour out approximately half of this mixture into a pot. Heat on the stove at medium temperature for the person who eats by mouth.


Meanwhile, toast both pieces of bread. Add one piece of toasted bread to the blender (which should still contain half of the pureed soup). Blend again, until the toast is fully incorporated into the soup. Add more water if you desire a thinner consistency.


Pour the blended soup into a dish for the person who eats by tube if they use a syringe for their tube feeding. If using a pump, place the blended soup into the administration set (feeding bag). By now, the soup in the pot will be hot. Serve in a bowl with the remaining piece of toast on the side, for the person eating by mouth.

Makes two portions of about 300 ml. Each portion provides approximately 285 calories, 13 g protein, 23 g net carbohydrate, 13 g fat and 5 g fiber.
