Carrot Cake Oatmeal

I hope you enjoy this nutritious blenderized tube feeding recipe. As usual, this meal was designed to be nutrient dense and the ideal viscosity for tube feeding, but trust me, it has a wonderful aroma and tastes absolutely delicious for anyone interested in enjoying it by mouth.

Carrot Cake Oatmeal: Simple and Comforting

Ingredients:

1 cup cooked oatmeal (I used Bob's Red Mill Organic Quick Cooking Steel Cut Oats)

1 cup 1% milk or your favourite plant-based milk (use soy or pea for lots of protein)

1/2 cup chopped steamed carrots

2 chopped and pitted medjool dates (substitute 2 tbsp honey if you don't have dates)

2 tbsp chopped walnuts

1 tbsp cream cheese (or coconut cream for a vegan alternative)

1 tsp fresh minced ginger

1 tsp ground cinnamon

Steps:

Blend all ingredients together until smooth. If you want a thinner texture, add a little more milk. Strain as needed and enjoy!

*Note: I added the dates to the oatmeal as I cooked it, this softened them considerably and made them easy to blend. Depending on the strength of your blender, you may want to use this trick.

Nutrition Information:

This recipe makes around 600 mL and provides approximately 615 calories, 20 g protein, 20 g fat, 82 g net carbohydrate, 13 g fibre, 435 mg sodium, 570 mg phosphorus and 1153 mg potassium.
